After watching Nigella last night I decided to give it a go. These my dear friends are Nigella's Royal Icing Cupcake. Yummy. Delicious and a tad dry. My bad. I did not add enough milk.... owh well next time. They are easy to make too. Took me less than 1 hour to make. Here is how you make it.
CUPCAKE
This will make 12 cupcakes.
Heat up oven for 200C
- 4oz flour
- 4oz sugar
- 2 eggs
- 4oz unsalted butter
- 1 teaspoon baking powder
- 1/2 teaspoon bi carb soda
- 2 teaspoon vanilla essence
- 2 tablespoon milk
- Blitz flour, sugar,eggs, butter, baking powder, bi carb soda and vanilla essence together until smooth.
- Add milk.
- Add one tablespoon full in each cupcake holder. (believe me this is enough)
- Put it in the oven for 15-20 minutes.
- Leave to cool
ROYAL ICING
- 350g Royal Icing Sugar (run it through the seive)
- 2 egg whites
- A squeeze of lemon juice
- Whisk Icing sugar and egg white until fluffy. (about 5 minutes)
- Add lemon juice and whisk again.
- Add to cooled cupcakes.
